If you have a Windows server running 24/7, then Mercury/32 is your easiest
bet. Merc/32 took about 30mins to get going from scratch. Just make sure
you use the new V3.30 beta - its stable and has a lot of stuff ironed out
over the old 3.21.

On top of Merc/32 I run SquirrelMail, it's a webmail front end, that
connnects to Merc/32 via IMAP (another reason for v3.30).

To get SM going takes 3mins - providing you have Apache webserver and PHP
installed on your server. Apache 30mins, PHP 2mins.

Then you can just access your mail thru a web browser on your Fuji - smart!

If you must use Outlook, you just change the 'pop3.freeserve.com' etc in
your Outlook accounts setting to the IP address of your
server '196.128.10.1' etc. Easy.
