Networking is what I do for a living, so I can answer any questions you
have.  Please feel free to shoot me questions off-line if you would
like.
As for choosing a protocol, I would stick with TCP/IP.  NetBEUI will
be
easier for you to set up, but you will have issues when you do things
like
connect your network to the Internet (I could go on and on).  Picking
an O/S
is a matter of personal choice XP and 2k are both good choices, since XP
is
newer you will get a longer life out of it.  For server apps,
especially on
and oldish PC, you may want to look at Linux.  For someone that needs
a GUI
check out Mandrake http://www.linux-mandrake.com, or
maybe even RedHat
http://www.redhat.com if you are a
little braver.
