couldn't you have a float sensor ala small bead in the kettle type
affair.
When the bead reaches a point it activates a switch / relay type thing
and
switches off the water supply.....

Sorry, this is actually a stupid idea!
The air in the pipe would stop the water flowing in. Double DOH!
