Guys, when I was looking for a bath (kept the old at the end - no SWMBO approval for new), I found some jakuzzi, or similar ones which offered such feature. Why don't you try to see how it was implemented there and just copy the solution, just make it cheaper. It probably has all the overflow protections and similar stuff.
Unfortunatelly, I cannot remember, which models had that feature, I had more than 50 catalogues at some point, but there were just one or two of them.
I know that I am not much usefull, but that's the best I can do at the moment. I'll take a look and if I found that model, I'll let you know.

A while ago a pal of mine did just something similar.  He put the valves on his
existing tap pipes so that he could use a preset mixer (Electronic - Very
envious was I) and a button which was connected to HV.  Pressing button turned
on valves, pressing again turned off.

HV then controlled the valves.  He took a tee from one of jacuzzi jets and
coupled this to a untrasonic pressure transducer which produced an analogue
voltage output.  This was again wired back to HV and when the transducer
produced the correct voltage HV turned off the valves as the correct volume of
water was in the bath.

Took a while to callibrate but after that never failed.  When he was game enough
he left the taps turned on and set up a timed event in HV to fill his bath in
the morning.

I'm sure he got the transducer from RS and it was not that expensive.
