Had similar thoughts (since I have 2 old non colour versions because
the kids got GBA's), but the lack of touch screen put me off... and the
fact that I would need a developer kit and programmable "empty" cartridge.

There *must* be a solution to networking because you can buy the link
cables to connect 2 (or 4?) together.. probably just a serial line but
that would be good enough to communicate with a central PC.
