I'm using Outlook 2000, this is how its done:-
* Use the menu to get to "Tools -> Options"
* Select the "Mail Format" tab
* For the "Send in this message format" combo choose "Plain Text"

This means all new messages will be in HTML, however replies will match the
format of the original mail.  To fix this MS deficancy you need to change
the format of each HTML replied message to Plain Text.

Add a "Plain Text" button to your compose toolbar:-
* Click "Reply" to a a HTML message that some g*t has just sent to the group
(you'll be able to recoginise this as the email will have colour advert
images at the bottom)
* Use the menu to get to "Tools -> Customise"
* From the "Commands" tab, choose "Format" from the catagories list
* Scroll down in the "Commands" list to locate "Plain Text"
* Drag this "Plain Text" button to your reply emails toolbar

Additional settings:-
- In the "Prefences" tab click "Email Options" there are other options to
affect the way quoted text on a reply/forward is included.  I personally
prefer "Prefix each line of the original message" with ">"
