Mdk's the best distro, again, this is personal opinion.

You actualy only need the first disk to install, but there are some
nice
packages on the second disk you might like. you don't have to install
the
all the packages, you can grab them off the CD whenever, if you discover
you
need something you didn't install in the setup process.
