Hi Mark,
(I'm using Expansys for examples cause they normally have good toys
available with reasonable prices... ;))
You can get a Compaq GPRS sleeve for the iPAQ.....

The other option in this vein is

.... not quite as nice, but the card could be popped into a laptop where
appropriate/ at the end of the project etc.
The other option, as Stu already mentioned is a Bluetooth based
solution.....
Either iPAQ 3870 with built in bluetooth, with a suitable phone
(T39,T68,6310 etc) or any iPAQ plus

which is a bluetooth sleeve, with CF slot.
There are other bluetooth options involving buying a pc card/ cf sleeve
and a seperate bluetooth pc card/ cf card, depending again on wether you
require it to go into another device at any point
Can any of the guys who've used GPRS comment if it ties up the line? I
don't think it does, but may be wrong....
The suitability of phone + device or datacard + device will depend on
things like - do you want them to use it for voice as well, or only data
(yeah, the sim card could be moved to a handset, but.... :S ) do they
currently have phones, and if so are they bluetooth compatible, wether
you want it tied to one device or want iPAQ + laptop etc
