I've looked into this, and the news is not good.

As far as I can tell, MHonArc does not support supression of email
addresses in archived messages.

The discussion groups for MHonArc have discussed this vexed question
a number of times, and there are not any really satisfactory ways to
do whats wanted.  With creative configuration, the displayed headers
can be changed, which sounds good.  But, the email address is still
often encoded into the message-ID string, which stays available.
Worse, if you munge the message-id, the threading features apparently
break.

I'm open to suggestions here.  How do folks feel about the issue?  If
lots of people think visible email addresses is unacceptable, then I
guess I really better disable the archive immediately, before it is
trawled.  When I have a solution, I can put it up again.
