Well, actually, it *is* "possible" to go beyond two... I have in
the past
seen it working whereby a PC has two NIC's in it, with each one connected
directly to another PC with X-over cables... The machine in the middle,
(the
one with 2 NICs) had IP forwarding turned on effectively operating as a
router...

In theory, there's no reason why this couldn't be extended ad-infinitum...
(well, within the limits imposed by Ethernet for the number of repeaters
allowed and so on...)
