Depends how far you want to send the signal.

KAT5 will let you send it over long distances!

Otherwsie you can use Cat5 for line level, but bear in mind it is not
screened and so will be suseptable to interferance. and If you have a
patch panel in the equation then that could open a whole new can of
worms.

You will suffer from signal loss over distances, and I am not sure on
the impedance of Cat5, so you may have to check that out too.

In short, I would recommend using screened cable or consider using
KAT5
