Exactly what I do, even down to MusicMatch Jukebox. You are right in that
each client needs to have its local library file updated when new files are
added to the server.

One of my client PCs is connected to an Amp with a simple manual speaker
switch which allows me partial zoning within the house. Works suprisingly
well !!

I use a player/ripper called musicmatch jukebox. I think I got it from
MP3.com

The mp3 files are held on the server (obviously) which is called Wurlitzer
each client pc has to have the server drive mapped to it ( I map to drive
M:
for music)
when the mapping is done a music library is created on the client, you can
choose all or some of the files you created.
assuming the server is 24/7 and you choose reconnect to mapped drive on
boot
up for client, you've instant access to your music from any PC.

I haven't yet worked out what to do when files are added to the server, I
think each client library file will have to be updated.
