Whilst we are on the subject, does anyone know of software that can be
used as a smart motion sense, but can handle a system which cycles
through multiple cameras?

So that it could learn what was "okay" for three different
scenes, but
not be triggered by the actual scene change itself?

The only other option I have (I have one of the response four way
switchers) is to rig up something on the serial port which will respond
to the "trigger" signal of the PIRs being activated.
