Given that CAT5 UTP has 4 pairs, it is possible to send any of the
following:

S-Video (1pr for Y and 1pr for C) AND stereo audio (1pr for L and 1pr for
R)

Composite video (1pr) AND stereo audio (1pr for L and 1pr for R) AND IR
(1pr)

RGB video (1pr for R, 1pr for G, 1pr for B and 1pr for sync)

So, unless you are happy enough with composite video, you need to consider
sending IR remote commands too.

Of course, if installing CAT5 for this, you will run 2 cables to each
distribution point (to provide power and for possible expansion) as you can
never have enough copper!
