Unless it's some peculiar kind of pressure mat, I think you'll find that one pair is the pressure switch and the other is the anti-tamper loop.
 
You'll have to check it with a multimeter or continuity tester. The anti-tamper loop should be closed-circuit. The pressure switch will be open-circuit until you put some pressure on it. Unlike most alarm sensors, pressure mats are normally-open, so they have to be wire in parallel to a N/O-input on your alarm panel.

Guys,

 

I got a stairs sensor mat ages ago and there’s no instructions.

 

I have two wires pre-bared and two fully sleeved, obviously one set is the switch and one set is the 12V DC supply, does anyone know what is what?
