From the audiotron list that I have been following for a few months, the consensus is to use EAC for ripping, LAME for encoding and T&R or Dr Tag for tagging.
 
From the r3mix site:
 
LAME >= 3.85 -b256 -ms -h 256kbit/s Stereo is distinctly the most accurate mp3 encoder (Best archiving for cbr)
 
LAME = 3.85 -V1 -b128 -mj -h -q1 VBR is by far the best overall archival mp3 encoder if size does matter (highest quality/size ratio)
 
I made the BIG mistake of not investigating this before I started ripping, and now having to rip again.

So, have we come to a conclusion of what's the best software to use for the DDAR ?

I have tried Tag&Rename - not bad for exisiting MP3 files (albums especially)

The CDEX isn't too bad. Is the Lame encoder OK ? I've ran a disk at 192-224 VBR.

And if you do change the tags, I find I have to remove the directories and re-add for it to be updated - or is it my impatience !!
