I have a similar problem - we have shared folders in work for the company diary.
 
From what I've found out you can't do this with ActivSync.  However, apparently you can with some 3rd party products.  Try searching deja (or google as it is now).

it to sync with a subfolder of the inbox, i have loads of outlook rules and
i want to sync some of the many subfolders with the ipaq, I seem to only get
