Sorted it now!
Turns out the 3.5mm jack is a weird sort that has a sprung loaded bit in it
which breaks a circuit when the plug is inserted or something!
Bought some "normal" ones and all is well.

F.Y.I. What I did was make up a serial to RJ45 lead which plugs into a
network point near the PC, the temp board is in the rack so I can patch the
sensors in any spare network point. It works well!
