In my new house there is an old home brew alarm panel, with what looks
like 4-core unscreened cable going off all over the house.

What's the easiest way to find out which wires go where? The is one
particular set that I want to use to interface the doorbell to my PC.
It's only going to be a simple switch (the doorbell) so I'm not bothered
about interference that much, but all the wires come back to under the
stairs, and they're all the same colour cables :-)

What I was going to do was attatch a baterry across two cables upstairs
and use a bulb across the various cables at the other end, but seeing as
I don't know where the other cables are coming from, this doesn't strike
me a being a really bright idea.
