I run colour and mono video camera through Cat-5 with power, sound and
video in the same 4-pair cable.
My home is floodwired (one of these days my WWW article will be ported
here) and only the cable to the shed has shown any problems with noise
as it runs with mains cables in a duct.
One problem encountered was voltage drop causing 'ground bounce' on a
video camera. Basically, the camera doesn't pull a constant current so
the cable resistance causes the voltage at the far end to go up and
down.
This was cured with a smoothing capacitor wired across the camera 12v
supply at the far end of the cable. An electrolytic of about 200-100uF
did the trick.
Alarm cabling is typically stranded and thicker than cat-5, but as you
have 8 wires, why not just use two for ground and two for 12v?
