Pico is the first name that springs to mind if you want to buy one- I think
Maplin sell their parallel port ADC dongle things, they don't have memory
for data logging, IIRC.

And a PIC if you want to build it, and want data logging.  All the newer
ones have at least 4 x 10-bit ADCs..
