SCART would seem ideal, though I have to agree with Canford Audio who say
in their catalogue something along the lines of never having met a customer
who likes using the things... It's probably the only one-connector choice,
but if folks are making up their own boxes, it is a swine to prepare the
cutout.  Probably nothing wrong with a few phonos, or even an RJ45 with an
RJ45 - SCART adaptor.  Hey, I like that idea...

Well definitely don't take my word for it!  Maybe the shy lurkers can email
you directly instead of discussing here?  Design by committee never seems
to work very well anyway... I mean, you posted 3 options, and straight away
some difficult sod (ie me!) suggested another one- it could run for years!
