[KAT5] Kitchen Audio Tips

I am planning to extend my audio / Kat5 system into the kitchen. I
plan to use ceiling speakers, and conceal the Kat5 along with an Amp
in a cupboard. Does anybody have any recommendation re Amps, and
more specifically a way to control the volume by wire? Thus, I
would like to have a volume control / on-off mounted to the wall as
the Amp will be out-of-sight.

Has anybody else done this? Any ideas / tips / tested methods very
welcome?

Also, any ideas re balancing the sound? I have fairly high-end HiFi
kit, but cannot realistically use the same amp and cannot get
similar speakers.
